What is the bartender tip for a Too Soon?
A Cynar and gin sour, with the orange pulp muddled in the bottom of the shaker — press the flesh, not the peel. Cynar is an artichoke amaro; without it this is just a gin sour. London Dry holds the bitterness; a very citrus-forward gin disappears behind the lemon. Use 1:1 syrup. Double strain into a chilled glass, with no ice in the serve. It is not the Ouro de Tolo (Cynar, honey, and basil, with egg white, on the rocks), the Hanky Panky (gin, vermouth, and a touch of Fernet, no citrus), or the Bitter Giuseppe (Cynar and vermouth, stirred).
