What is the bartender tip for a Coffee Enzoni?
Dan Fellows; this recipe follows Steve's version with Mr Black. Black grapes instead of green, coffee liqueur instead of syrup: the classic Enzoni is light and citrusy, this one is dark and roasty. The four liquids go in equal (22 ml). Cabra Lab stands in for Mr Black — no extra syrup. Kahlúa is sweeter: don't add syrup on top. A very dry liqueur (around 100 g of sugar per liter) needs about 10 ml of 2:1 syrup. The 1:4 saline solution (1 part salt to 4 parts water) opens up the bitterness; a pinch in the shaker does the job at home. The catalog's Coffee Negroni is stirred, with vermouth, no grapes. Double strain.
