What is the bartender tip for a Tropical Shadow?
The hole in the crushed ice is what stacks the layers: grenadine at the bottom, pineapple in the middle, rum and Sprite on top. Stirring wipes out the gradient. Sprite (or Lemon Fresh) brings the fizz — soda water leaves the drink lean. The 22 ml of grenadine is the ¾ oz of the spec; if the pineapple juice is very sweet, drop 5 ml. White rum, not gold: gold muddies the top layer. The Hakuna Matata also puts grenadine at the bottom, but with coconut, banana, and spiced rum; the Sailor's Sunrise shakes rum and orange and only then sinks the grenadine. Crushed, not cubes: the hole won't hold in whole ice.
