What is the bartender tip for a Clericot?
Winepedia's traditional version calls for a bottle of brut sparkling wine (or a good dry white), two cups of fruit, and two shots of orange liqueur. Cointreau or triple sec covers the liqueur. Use whatever fruit you have: strawberry, grape, apple, peach, pineapple — the payoff is a colorful pitcher, not a fixed list. Sugar only if the wine is very dry and the fruit underripe; more than that and it's juice. It's not Tinto de Verano: that's red wine + soda, no macerated fruit. A domestic brut sparkling wine works; red wine buries the clericot's character. Stir little after the bubbles go in so you don't kill them. Crushed ice in the pitcher, not in an empty glass.
