What is the bartender tip for a Caribbean Ember?
Tyler Malone, Zazu (New Orleans, 2025): 45 ml dark rum, 15 ml rye, 15 ml pineapple, 7.5 ml lime, 7.5 ml maple, and 5 dashes Angostura, lengthened with ~75 ml ginger beer. The rye stays behind — equal parts bury the rum. Planteray (more gold than blackstrap) lets the rest show; gold rum covers it. Ginger beer, not ginger ale. Little juice on purpose: the pineapple is a note, not a punch. It's not the Dark 'n' Stormy (just rum and ginger beer), the Jungle Bird (Campari, no whiskey), or the Snap Out of It (tequila and ginger).
