Caiperol
Caiperol is a bitter, citrus and sour cocktail made with Cachaça, with moderate flavor complexity.
Ingredients
- 1 lemon (6 wedges)
- 15 ml demerara syrup
- 70 ml Aperol
- Ice
Method
- Cut the citrus into 6 wedges, trimming off the ends.
- Place them in the glass flesh side up and peel side down to avoid pulling out too much bitterness.
- Add the syrup and muddle gently, just until the wedges burst.
- Fill with plenty of ice.
- Add the spirits.
- Use the spoon to lift the citrus from the bottom to the top, mixing and chilling the drink at the same time.
