Mojito

Mojito is a herbal, citrus and refreshing cocktail made with Rum, with moderate flavor complexity.

Ingredients

  • 60 ml white rum
  • 30 ml fresh lime juice
  • 15 ml simple syrup
  • 10 to 12 mint leaves
  • Soda water (to top)
  • Ice
  • Mint sprig
  • Lime wedge

Method

  1. Slap the mint leaves in your palm to release the aroma — don't shred them.
  2. In a highball glass, combine the mint, lime juice, simple syrup, and white rum.
  3. Fill the glass with ice.
  4. Top with cold soda water and stir from the bottom up without losing the carbonation.
  5. Garnish with a mint sprig (also slapped) and a lime wedge.

What is the bartender tip for a Mojito?

Slap the mint, don't pound it: crushing releases bitter chlorophyll. Cuban white rum (or any light white rum) is the classic; gold rum is heavier and buries the mint. The 15 ml of syrup balances the 30 ml of juice; the IBA uses granulated sugar and a bit less rum — if your soda is very dry, add 5 ml more syrup. The catalog already has the Cachaça Mojito; this one is the rum-based Cuban highball.
