What is the bartender tip for a Cherry Caramel?
Elvéra is already sweet with caramel: 10 ml cherry syrup and 10 ml vanilla (20 ml total against 50 ml vodka) is the sweet spot for a dessert highball. The soda water is the cut and the dilution — without it the drink gets cloying. Stir the vodka and syrups before the soda: both syrups are denser and otherwise stay at the bottom. After the fizz goes in, just one or two turns of the spoon. If it's too sweet, drop 5 ml of the vanilla and keep the cherry (color and fruit). Ice to the brim in a highball glass keeps the fizz cold.
