What is the bartender tip for a Caju Blue?
Ready-made honey cachaça (Quero Chuva de Mel) already sweetens the drink; if you don't have it, replace the 75 ml with equal parts white cachaça and honey. The juice is the boxed concentrate — cajuína is a different product, lighter and clarified. Leave room for the soda and stir just enough not to kill the fizz. The blue curaçao goes in last, unstirred, and forms the layer at the bottom. A splash of ginger syrup in the glass before serving adds a kick that plays well with the cashew fruit.
