What is the bartender tip for a Aperol Spritz?
The golden rule is 3-2-1: three parts prosecco, two parts Aperol, one part soda water. Brut (or extra brut) sparkling wine balances the Aperol's sweetness; demi-sec makes it cloying. Pour the prosecco first to preserve the bubbles and stir as little as possible. A wine or balloon glass leaves room for ice and the orange aroma. Any good dry sparkling wine can stand in for prosecco.
